*41  Observed a bucket of sanitizer to be stored on a shelf above food trays (those on the shelf near the flat surface grill). Provide for all food, equipment, utensils, and single service articles to be stored either above or completely separate for all toxic chemicals. 750.1310 Immediate/Onsite
*45  Observed an insufficient number of food safety managers to be employed at this facility--only one. There shall be at least one food safety manager onsite whenever food is being prepared [750.540]. This establishment shall ensure that at least three employees are certified as food safety managers by 5/3/2018. Next Inspection
10  Observed the handle of the ice scoop stored in the ice bin attached to the soda dispenser by the drive-thru window to be touching the ice cubes. In addition, I observed the ice scoop used at the large ice machine to be stored on an unclean surface. Provide for the ice scoop utensils to be stored in one of the following manners: (1) in a Clean and dry container, or (2) In the food product with the handle up and out of the food product [750.280]. 15  Observed the thermometer installed on the exterior the cres cor warmer to be malfunctioning. In addition, I observed the cabinet surface under the soda dispenser to be rotten and in significantly deteriorated. Repair fixtures in this establishment [750.600]. Next Inspection
23  Observed the following non-food contact surfaces to be unclean: (1) exterior of the Delfield freezer, (2) exterior of the Cres Cor Warmer, (3) exterior of the fryers [3x], (4) interior of the chemical storage cabinet, (5) faucet near the hot water dispenser, (6) bottom shelf of the cabinet under the salsa and sauce self-service station, and (7) waste sink near the restrooms. Clean all surfaces and maintain [750.800]. Next Inspection
36  Observed the following floor areas to be unclean: (1) under the main prep station, (2) under the delfield freezer, (3) under the three fryers, (4) under the ice machine, (4) area around the hand sink near the 3-compartment sink, and (5) area around the waste sink located near the restroom. Provide for all flooring areas to be in a clean condition [750.1220]. Also, I observed broken floor tiles under the sink near the hot water dispenser. Provide for all flooring areas to be smooth, easily cleanable, non-absorbent, durable surfaces, and be maintained in good repair [750.1200].
